Curried Squash Soup


Fall/winter

This classic soup is a household favourite, its delicious on its own and even better when served with a baguette or naan bread.

Ingredients
  • 2 tablespoons of olive oil
  • 1 onion, chopped
  • 2 leeks, sliced
  • 2 cloves of garlic, minced
  • 2 tablespoon of curry powder
  • 3lb squash, diced
  • 3 carrots, chopped
  • 8 cups of stock

Directions

Heat the oil in a large pot, add the onion, leeks and sauté for 5 minutes.

Add garlic, curry and cook for 2 minutes while stirring.

Add squash, carrots, stock and simmer until tender.

Puree in blender, add curry or seasoning of choice and serve.
